Fish in mustard sauce ^^^^^^^^^^^^^^^^^^^^^ Fish to feed two -- thin white fish fillets, skinless Three good tablespoons of mayo Three good tablespoons of mustard. I prefer honey & whisky mustard 75% of the juice of one lemon New Potatoes for two Peas/other-veg for two Prepare the sauce ^^^^^^^^^^^^^^^^^ Mix the mayo, mustard and lemonjuice in a bowl until well mixed. Add salt and pepper to taste. Cook the veg ^^^^^^^^^^^^ Get the veg cooking. Remember to time things so that you know when it will be five minutes from the end of the veg cooking. Cook the fish ^^^^^^^^^^^^^ Butter a baking sheet. Season the sheet with salt and pepper. Lay the fish on the sheet, salt the fish lightly Spread 1/3 of the sauce onto each of the fish fillets making a thick coating. Season the combination with pepper. Five minutes before the end of the veg cooking, put the fish under a very hot pre-heated grill. Serving up ^^^^^^^^^^ Put the potatoes into a bowl or pan, add the remaining 1/3 of the sauce to the pan and coat the potatoes. Serve the veg onto the plates, then carefully put the fish onto the plates taking care not to spill the sauce. Now pour some of the fish juices from the baking sheet into the pan which had the potatoes in (and will have some sauce remaining). Mix it up and drizzle this over the veg, and hand to hungry people for munching.
