Lemongrass Panna Cotta ^^^^^^^^^^^^^^^^^^^^^^ Untested so far... 400ml Cream 200ml milk 50g castor sugar 1 stalk of lemongrass, cut into 10cm pieces and bruised 2 leaves of gelatin (gold) Method... Combine cream and milk in a pan and heat gently Add sugars and stir to dissolve Add the lemongrass and simmer gently for 10min Remove for heat, cover and set aside for 15min Remove lemongrass. Soak gelatin leaves in cold water to soften. Squeeze excess water from gelatin by hand and stir into the milk mixture Put it into pots and refrigerate until it is set.
