This recipe is courtesey of Helen Ashby ^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^ Thai Curry Paste 2tsp coriander seed 1tsp cumin seeds 1tsp black peppercorns 8 chillies 3 shallots 4 cloves of garlic 3 corriander roots 2.5cm gangal/ginger 2 stalks lemongrass 2 kaffir lime leaves 2tsp shrimp paste 2tbl corriander leaves toast seeds and peppercorns in wok, prepare all other ingredient and combine all in blender and blend till paste
