Vanilla Spiced Vodka Granita ---------------------------- Seeds of 10 good size cardamom pods. 1" ginger root, chopped/sliced 2" cinnamon, broken up. 2+2/3 cups water 2/3 cup sugar Juice of one lime 1/3 cup vanilla vodka (1/4 if you want it to freeze harder, 1/2 if you want it sloppy rather than firm) -- Extract the seeds from 10 good size cardamom pods and break them up slightly. Peel and chop approx 1" of ginger root, and break up 2" of cinnamon stick/bark into a pan. Lightly dry-toast the spices until they are fragrant, then add the water and sugar and bring to the boil. Reduce the heat to minimum, cover, and allow the spices to infuse for 30 minutes or so. Remove from the heat and squeeze in the juice of one lime (drop the chunks of lime in afterwards if want to increase the citrus flavour a little). Allow to cool. Once cool enough that you don't hurt yourself if you put your hand on the pan, add the vodka and filter it into a plastic kick-lock box. Put in the freezer. After 2h, remove the box and shake vigorously. Replace in freezer. Every 30m, repeat the shaking. After about 6h of chilling, it can be left. -- To serve, remove from freezer about 1h before serving, fluff up with a fork and then return to freezer. To serve, remove from freezer, scrape granita into bowls/glasses with a fork, and serve immediately.
